Healthy summer meals for ALL the family

Summer is on the horizon meaning lots of things - warmer weather, fun activities and best of all, great food!


Now that university has finished, how will you spend your time off with your children?

However you spend your day, finish (or start) it with a great meal that everyone in the family will love. All 4 ideas are quick, easy and cheap so what's not to like?

Oatmeal pancakes: If you want to mix up breakfast time then oatmeal pancakes are the way forward. You don't need to fuss around with lots of ingredients and they're healthy but kids love them. Plus, it's a breakfast that will give you all a great start to the day!

Pasta saladsNot many children will ask for a salad, and they'll never really want one either but have you thought about adding pasta? It's a perfect light meal for summer and using lots of different colours in there will make children more interested. You can always take it to work the next day too - sorted!

DIY pizzaThis is one of the easiest things you can make with children and they absolutely love it! Use a tortilla or pitta bread as the base and just let them pick some toppings - it could be as simple as cheese and tomato. Because they're so proud of it, they'll eat it with no complaints and you'll already have the ingredients in the house. 

Vegan mac 'n cheese: This the perfect addition to any BBQ and something that all the family will love, plus it's so simple that you can't really get it wrong. Taking a vegan twist on it makes it that little bit healthier but who doesn't love a little treat now and again?

When the weather is warmer, you don't want to be cooking a stodgy, hot meal so it's best to stick to something light - they're usually cheaper and easier too.
